This is an easy quick soup that the whole family will love - has a little ZING to it!
1 Tbsp oil
1 yellow onion diced
3 cloves minced garlic
1 fresh jalapeño seeded and chopped
5 cups veggie stock or water...
2 cups butternut squash peeled and cubed
2 Tbsp DARK rum
1/4 tsp allspice
4 cups spinach leaves tails on are OK...as it goes through a blender
1 cup coconut milk
S&P to flavour
In a large pot sauté onion and garlic jalapeño and oil. Add stock, squash, rum and allspice. Simmer until the squash is tender. Purée in blender. Add washed spinach leaves and coconut milk. Purée again. Reheat in pot and add salt and pepper. Add a splash more rum at the end if you like. ENJOY!
